From vegan tempuras to plant-based soba noodle dishes, Vegan JapanEasy is a definitive guide to making delicious, vegetable-focussed Japanese meals at home. Author Tim Anderson has curated a collection of recipes that focus on using simple substitutions – or, in recipes that are already vegan, no substitutions at all – to recreate the tasty, umami-rich and unforgettable flavours of Japanese food. And the clue is in the title: each of these recipes, from curry ramen to crispy fried eggplant, are quick, unfussy and very easy to follow. If you’ve been wanting to make the switch to vegan, or are a vegan looking for a new cookbook, this is the one.
Tim Anderson is a chef and food writer based in London obsessed with Japanese food culture. Born in Wisconsin, he spent two years living in Japan after studying Japanese food at university.
